COLD AVOCADO SOUP

Another fab and delish dish for those hot days.
Some of you might be worried because avocados are know for its high fat content, but they’re high in healthy fat. They help to lower blood cholesterol levels. Avocados also contain more pottasium than bananas. On top they are loaded with powerful antioxidants that can protect the eyes…and so on and on and on. To cut a long story short: avacados are your friends, not your enemies 😉

Guacamole is for sure the most popular dish you can make of avocados. But in my books this soup is serious competition to the popular dip that normally would be eaten with nachos…and those are 😈 for sure! Tons of calories and no nutritional value. But very yummy, I have to admit…and I cannot resist when they are under my nose.

Well, even if that soup might sound weird to you: pls give it a chance and let me know what you think of it, if you like.

INGREDIENTS:
2 avocados
300 ml natural yogurt
1 – 2 garlic gloves
1 shallot
lemon juice (approx 4 table spoons)
handful of fresh mint
1/4 tablespoon grounded coriander seeds
splash of tabasco
fresh chilli (as you please)
salt & pepper
For decoration: olive oil, seedlings, roasted pine nuts, fresh chilli, mint leaves..whatever you like. Be creative 😉

METHOD:
Put all ingredients in a blender. Blend until creamy and smooth. Season with salt & pepper as you please.
Place the soup in the fridge and chill for about an hour.
Serve with a splash of good olive oil, natural yogurt and any roasted nuts (pine nuts are the best) and seedlings. For a more exotic touch add a tahini-tamari-orange-vinagar dressing.

    looks good, need to try this before saying anything even if I like hot soups and I’m not mad about the cold ones x

    I hope you can make friends with cold soups. They are better than their reputation 😉 LOL. Looking forward to your feedback when tried. xxx

    mmm I’m not mad about avocado. I don’t like guacamole for example, but this soup with yogurt, shallot (new word for my dictionary) and olive oil could change my opinion about avocado.. I’ll let you know next week when I’ll try this one and also Gazpacho.
