I had a quick look in the fridge and I realised there wasn&#8217;t much going on in there. Just a zucchini, some mushrooms and a bit of cream cheese&#8230;that&#8217;s was it. Onions and garlic I always have in the house. Fresh leftover parsley from last night when I cooked the fish stew wanted to be used up as well.<\/p>\n<p>So this is what I cooked&#8230;and I have to say: I really enjoyed it. Another quick, healthy and easy to cook dish. And it saved me from having to go shopping today.  <\/p>\n<p>As much as I love &#8220;real&#8221; spagetti and any kind of pasta I also enjoy zucchini spagetti occassionally. They are delicious and low in carbs but high in vitamins.<br \/>\nTo make them you have to buy yourself one of those spiral cutters. You can get them in all kinds of sizes and they are not really expensive. I have this one: <a href=\"http:\/\/www.amazon.de\/Lurch-10306-Spiralschneider-gr%C3%BCn\/dp\/B00AYUZF6U\/ref=sr_1_13?s=kitchen&#038;ie=UTF8&#038;qid=1439850212&#038;sr=1-13&#038;keywords=lurch+amazon\">Spiral Cutter Lurch<\/a> But this little fella will do as well&#8230;doesn&#8217;t take up so much space: <a href=\"http:\/\/www.amazon.de\/Gefu-89167-Spiralschneider-Spirelli-blau\/dp\/B00I076DI8\/ref=sr_1_3?s=kitchen&#038;ie=UTF8&#038;qid=1439887578&#038;sr=1-3&#038;keywords=spiralschneider\">Gefu spiralizer<\/a><\/p>\n<p>And here we go:<\/p>\n<p><strong>INGREDIENTS:<\/strong><br \/>\n2 tbs butter<br \/>\n1 tbs olive oil<br \/>\n1 onion<br \/>\n2 &#8211; 3 garlic gloves<br \/>\n10 mushrooms (sliced)<br \/>\n2 tbs cream cheese<br \/>\n1 zucchini (spiralized)<br \/>\nsalt &#038; pepper<br \/>\nAngels hair (chilli strings) or herbs for decoration<\/p>\n<p><strong>METHOD:<\/strong><br \/>\nSpiralize the zuchini and put aside.<br \/>\nHeat the butter in a pan and add the chopped onions and garlic. Allow to brown.<br \/>\nAdd mushrooms, fresh parsley, salt &#038; peeper.<br \/>\nFry until brown. I always like them a bit crispy.<br \/>\nAdd cream cheese, salt &#038; pepper. Stir thoroughly and remove from heat.<br \/>\nHeat olive oil in a second pan.<br \/>\nAdd the spiralized zucchini and fry for about 2 &#8211; 3 minutes. Make sure you don&#8217;t overcook them. They need to be &#8220;al dente&#8221;. Season with salt and pepper to taste.<br \/>\nPlace zucchini in the middle of a plate and top it with the mushroom sauce.<br \/>\nDecorate with herbs or angels hair (chilli strings).<\/p>\n<p>Vegans can of course just drop the cheese.
