I could spend my holidays eating just these two. Easily!<\/p>\n<p>Cooking a paella is an art of its own and so far I haven&#8217;t made one myself. This will be one of my next challenges. A lovely spanish girl recently sent me her recipe. So I gotta try this for sure! I promise to share me experiences here. <\/p>\n<p>A tortilla is very easy and quick to make. You don&#8217;t need a lot of ingredients and it is inexpensive.<\/p>\n<p>You can eat it cold or warm. Depending on your own taste and preference. I personally like both versions. <\/p>\n<p>The classic spanish tortilla is made of potatoes, eggs and onions. Even though I love the simplicity of this dish I wanted to give mine a bit of a twist. So I swapped potatoes for sweet potatoes and added goat cheese and turkey ham. <\/p>\n<p>And here we go&#8230;<\/p>\n<p><strong>INGREDIENTS:<\/strong><br \/>\n500 &#8211; 600 gr. sweet potatoes (peeled &#038; cooked)<br \/>\n2 tbsp olive oil<br \/>\n1 large onion<br \/>\n100 gr smoked turkey ham<br \/>\n7 &#8211; 8 eggs<br \/>\n200 gr goat cheese roll<br \/>\nsalt &#038; pepper<br \/>\nfresh chives <\/p>\n<p><strong>METHOD:<\/strong><br \/>\nPeel the sweet potatoes, cut them in medium sized cubes and cook over a medium heat in slightly salted water for about 10 minutes. Make sure they don&#8217;t get too soft<br \/>\nChop the onion and the turkey ham<br \/>\nHeat 1 tbsp of olive oil in a ovenproof pan, add the chopped onion and cook until translucent<br \/>\nAdd turkey ham and sear for about 2 &#8211; 3 minutes<br \/>\nTake the pan off the hob<br \/>\nIn the meantime break the eggs into a medium large bowl. Add salt and whisk with a fork. Don&#8217;t overbeat them!<br \/>\nPreheat the oven to 200 \u00b0C<br \/>\nTransfer sweet potatoes, onion &#038; ham to the eggs in the bowl<br \/>\nCut the goat cheese in pieces and add to the mix<br \/>\nPut the frying pan over a medium heat and add 1 tbsp oil<br \/>\nPour the egg potato mix into the frying pan and immediately turn the heat down to low<br \/>\nCook the tortilla for about 1 &#8211; 2 minutes<br \/>\nThen place the pan in the oven and bake the tortilla for approx. 15 minutes<br \/>\nWhen ready take the pan out of the oven, hold a large plate firmly over the pan and flip.
