The thing with a brand new &#8220;love&#8221; is: you can&#8217;t get enough of it. The challenge is to satisfy your longing but not lose interest after a while. So you have to keep it interesting and diversified. And yes&#8230;I am still talking about food \ud83d\ude09<\/p>\n<p>However, after the lovely fennel salad I recently made and posted the recipe of I thought it would be nice to make a warm and comforting dish with fennel. You might have noticed by now that I like chicken. So I wanted to add a bit of that to the recipe. Like always: you could easily give the meat a miss and add more potatoes or any other veggie of your choice to make it suitable for vegans or vegetarians.<\/p>\n<p>And here we go:<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>INGREDIENTS:<\/strong><\/span><br \/>\n2 tbsp olive oil<br \/>\n1 onion (chopped)<br \/>\n1 garlic clove (minced)<br \/>\n2 chicken breast<br \/>\n4 &#8211; 5 potatoes (quartered)<br \/>\n1 fennel bulb<br \/>\n1 can chopped tomatoes<br \/>\n150 ml chicken or veggie stock<br \/>\n1 red pepper (chopped)<br \/>\nChilli<br \/>\nSalt &#038; pepper<br \/>\nCouscous<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>METHOD:<\/strong><\/span><br \/>\nPeel the potatoes, cut them in quarters<br \/>\nCut the green tops off the fennel and reserve for decoration<br \/>\nQuarter the fennel and cut out the core<br \/>\nChop the fennel<br \/>\nPeel and chop the onion and the garlic<br \/>\nHeat the oil in a pan over a medium heat<br \/>\nAdd the onion and cook until translucent<br \/>\nAdd the chicken and fry until lightly brown<br \/>\nThen add fennel and garlic<br \/>\nCook for about 5 minutes<br \/>\nTip in the potatoes and add the stock, pepper &#038; tomatoes<br \/>\nCover and cook for about 15 &#8211; 20 minutes until the potatoes are nice and tender<br \/>\nAdd a bit of chilli and season to taste<br \/>\nCook couscous as instructed on the pack<br \/>\nServe ragout and couscous in a bowl or deep plate and decorate with the fennel fronds<\/p>\n<p>Enjoy!<\/p>\n<p>Have a blonDISHious day,<br \/>\nSabrina xxx<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I recently wrote about my new found love for fennel.
