{"id":282,"date":"2015-10-04T09:00:06","date_gmt":"2015-10-04T09:00:06","guid":{"rendered":"http:\/\/blondishious.com\/?p=282"},"modified":"2015-10-04T11:40:04","modified_gmt":"2015-10-04T11:40:04","slug":"vegetable-stock","status":"publish","type":"post","link":"http:\/\/blondishious.com\/?p=282","title":{"rendered":"VEGETABLE STOCK"},"content":{"rendered":"<p>As promised in my previous recipe for <a href=\"http:\/\/blondishious.com\/?p=261\" target=\"_blank\">HOKKAIDO AND BUTTERNUT SQUASH SOUP<\/a> here is the recipe for a vegetable stock that can also be put in a freezer and defrosted when needed.<\/p>\n<p>It is great for all kinds of soups, stews and of course risottos &#x1f60b;<\/p>\n<p>For a vegetable stock you can also use leftovers like carrot peel and such. Any kind of vegetable crops.<\/p>\n<p>The veggies you cooked to make this stock are perfect for veggie balls. So please don&#8217;t throw them away. It would be such a waste. I will share a recipe for yummy veggie balls on my blog soon. <\/p>\n<p>And here we go&#8230;<\/p>\n<p><strong>INGREDIENTS:<\/strong><br \/>\n1 tbs olive oil<br \/>\n1 big carrot<br \/>\n1 big onion (unpeeled!)<br \/>\n1 leek<br \/>\n2 tomatoes<br \/>\n1 parsley root<br \/>\n1\/4 of a celeriac<br \/>\n1 garlic clove<br \/>\n1 sprig of thyme<br \/>\n1 handful of fresh parsley<br \/>\nsalt &#038; pepper<\/p>\n<p><strong>METHOD<\/strong>:<br \/>\nCut onion in half (leave the peel on. It gives the stock a nice colour)<br \/>\nHeat olive oil in a small pan on a medium heat.<br \/>\nAdd onion and roast. The roasted aroma gives the stock a special taste. But make sure you don&#8217;t burn it.<br \/>\nCut all vegetables roughly.<br \/>\nPut 2 litres of cold water in a large pot.<br \/>\nAdd chopped vegetables, the thyme, the parsley and the roasted onion and cook for about 1 hour on a medium heat. Stir occasionally.<br \/>\nPour cooked veggies through a strainer and collect the water in a big bowl or pot.
